Turkey burgers

High protein and low carbohydrates is the ideal combination for fat burning which is critical in a weight-making sport like boxing.

Turkey is very good source of lean protein and is ideal for these burgers. The carrot, beetroot and grapefruit salad is rich in vitamins
and anti-oxidants which boost the immune system.

Ingredients: Serves 2

Burgers

  • 500g turkey mince
  • 1 clove of garlic finely chopped
  • 1 tsp. parsley leaves
  • ½ carrot grated
  • ½ beetroot cooked and grated

Salad

  • 2 carrots grated
  • 2 beetroot grated
  • 10 grapefruit segments
  • 2 handfuls watercress
  • 25g sultanas
  • 25g almonds
  • Juice and zest of ½ lemon

In a large bowl place all of the burger mix and combine well. Add a pinch of salt and pepper and mix.

Now divide the mix into 4 and roll into balls. Flatten out the balls into burgers. Place the burgers onto a tray, cover and place into  the fridge for at least an hour to rest and firm up.

Once the burgers have rested remove from the fridge and drizzle the oil over each of the burgers and season with salt and pepper.
Now heat a large sauté pan over a medium high heat and when hot place the burgers into the pan. Cook for 2-3 minutes on each side  or until golden brown. Place the burgers into a preheated oven at 180 degrees for 8-10 minutes or until cooked through. Once cooked  remove from the oven and allow to rest for 5-8 minutes.

Meanwhile in another large bowl add the salad ingredients and toss well. Serve the burgers alongside the salad.
