Ingredients: Serves 4
- 400g diced chuck steak
- 1tbsp. olive oil
- 1 red onion roughly chopped
- 10 tomatoes roughly chopped
- 2 sweet potato cut into large dice
- 1tsp. ground cinnamon
- 1½ tsp. ground cumin
- 1tsp. ground coriander
- 1tsp. hot chilli powder 1
- bunch rosemary
- ½ inch of fresh ginger grated
- 10-15 dried apricots
- 1 tbsp. white wine vinegar
- 2 tbsp. dark soy sauce
- 200ml chicken stock
Directions
Heat a casserole dish over a high heat and add the olive oil. Once the oil is smoking gently add the beef and brown all over. Now add the onion and tomatoes and cook for a further 1-2 minutes or until the tomatoes are starting to break down.
Next add the sweet potato, and the remaining ingredients. Bring the stew to the boil and remove from the stove. Place a lid onto the casserole dish and place into the oven at 120 degrees -140 degrees for 2 ½ hours.
Remove from the oven and adjust the seasoning accordingly, and serve with couscous and minted yoghurt.
